A simple fluorimetric method for the determination of vitamin B6 in food materials is proposed, enabling total vitamin B6 to be determined after the chromatographic removal of interfering substances on Dowex 50 WX 8 columns. Pyridoxol, pyridoxal and pyridoxamine are transferred into the highly fluorescent lactone of 4-pyridoxic acid. The method is specific and agrees well with the microbilogical assay. Three or four determinations can be performed in eight hours.
