Diseases of man and animals associated with foodstuffs contaminated by molds have been known for centuries, but only recently have mycotoxicoses been recognized as a significant hazard to man. A detailed review of the literature involving the major mycotoxin-producing fungi is presented. Because of their hazards to both human and animal health, increasing concern has developed regarding the carcinogenic activity of aflatoxins and other mycotoxins. The symptoms of mycotoxicoses in man and experimental animals is reviewed and certain specific case histories reported. The industry is urged to implement all available techniques in order to minimize the contamination of foods by mycotoxins.
